The Best Recipes to Try This Pancake Day

We’ve had plenty of time to learn new recipes last year, but with all the difficulties it’s brought, we can’t blame you if you haven’t become the next Nigella or Jamie. Whether you’re bake-off ready or not, we’ve prepared some delicious recipes to help prepare for the tastiest holiday this year. Whether you want a traditional American-style indulgence or a gluten-free treat, we’ve got you covered.

The Classic English

When times are hard it’s best to lean on the basics. Whether you top yours with maple syrup and bacon, or head for the simple-yet-tasty mix of sugar and lemon, it’s hard to beat this sweet treat.


Ingredients (makes 8-12 pancakes):

110g plain flour

2 eggs

200ml of milk, mixed with 75ml of water

2 tablespoons of butter

A pinch of salt


Instructions:

  1. Sift the flour into a large mixing bowl, and work in a pinch of salt.
  2. Make a well in the flour and add your eggs.
  3. Whisk while gradually adding your mixture of milk and water until the consistency is smooth!
  4. Melt your two tablespoons of butter, then work it into the batter.
  5. Bring a pan to medium heat and cook with butter or oil. If your pan is hot it should only take around a minute to cook, depending on how thick your pancake is!
  6. Flip and cook the other side for 30 seconds, then serve with toppings of your choice.

Vegan Delight

If you’re looking for a Vegan twist on your pancake day, we’ve got your back. This delicious recipe produces fluffy, light pancakes while still indulging that sweet tooth.


Ingredients (makes roughly 4 pancakes):

125g plain flour

2 tablespoons sugar

1 tablespoon baking powder

1 teaspoon vanilla extract

A pinch of salt

240ml non-dairy milk. Use oat for a protein kick or almond for a sweet, nutty taste!

 

Instructions:

  1. In one bowl add the flour, sugar, baking powder and salt. Stir to combine.
  2. In a separate bowl add the milk, vinegar, and vanilla extract. Stir to combine.
  3. Gradually pour the liquid mixture into the dry mixture as you whisk until you form a smooth batter.
  4. Allow the batter to rest for at least 5 minutes.
  5. Bring a pan to medium heat, then get cooking! Use oil or a dairy-free spread of your choice to lubricate the pan.
  6. You should flip the pancake when the top begins to bubble. Cook until golden.
  7. Serve with toppings of your choice!

Gluten-Free Goodness

If you’re in the need of a gluten-free option, this sumptuous alternative should cover your pancake-day needs. We’ve also added some ideas for substitutes depending on your dietary needs. No one should be left out of pancake day!


Ingredients (makes six small pancakes):

125g gluten-free plain flour

1 egg, or a substitute such as mashed bananas. You can also use half a tablespoon of chickpea flour and one tablespoon of water, mixed

250ml milk – dairy, almond or oat

Oil or butter for frying


Instructions:

  1. Put the flour in a bowl and make a well in the centre.
  2. Add the egg (or substitute) and whisk in a quarter of the milk to thoroughly combine the mixture.
  3. Slowly add in your remaining milk while mixing.
  4. Leave to rest for at least 20 minutes. Stir again just before you pour it into the pan!
  5. Heat a frying pan to medium heat with oil or butter.
  6. Cook until golden brown on the bottom, then flip.
  7. Serve with toppings of your choice!

 

Crispy Crepes

While we’ve put our holiday plans on the backburner for a while, that doesn’t mean we can’t enjoy a little slice of Paris at home. These delicious Crepes take a little bit of preparation to get right, but they’re worth it! You can make the batter the night before for a stress-free pancake day.

 

Ingredients (makes around 14 thin crepes):

125g plain flour

1 tablespoon granulated sugar

180ml milk (room temperature)

120ml water (room temperature)

2 eggs

1 and a half teaspoons of vanilla extract

3 tablespoons of unsalted butter

A pinch of salt

 

Instructions:

  1. Melt 3 tablespoons of butter, then leave it to cool for 5 minutes
  2. Combine the melted butter, flour, salt, milk, water and eggs. Then, blend or whisk until you have a silky smooth batter!
  3. Seal and chill for 30 to 60 minutes, or up to 1 day.
  4. Once chilled, heat a pan to medium heat and use butter or oil to lubricate!
  5. Pour a thin layer of your batter into the pan.
  6. Cook for 1-2 minutes and flip as soon as the bottom is set.
  7. Cook the other side for 30 seconds.
  8. Fold and fill with the fillings of your choice!

 

Banana Mashup

Banana bread has been a staple this year. It’s quick, simple, and fills your kitchen with bready, cakey goodness. What’s not to love? We’re excited to share this delicious remix with you so you can have that same taste on pancake day! You should use overripe, blackened bananas for this one.


Ingredients (makes around 12 small pancakes):

350g self-raising flower

1 teaspoon baking powder

2 very ripe bananas

2 eggs

1 teaspoon vanilla extract

250ml milk

A pinch of salt

 

Instructions:

  1. Sieve the flour and baking powder then add a pinch of salt into a large bowl. Stir to combine!
  2. In a separate bowl, mash the bananas with a fork until smooth. Then add your eggs, vanilla extract and milk. Whisk until combined.
  3. Make a well in the centre of your dry ingredients bowl. Add your wet ingredients and whisk until smooth!
  4. Add butter or oil to a pan over medium heat then cook away. You can flip the pancakes when you see little bubbles on the surface. Cook for 1-2 minutes on the other side, depending on your preferred thickness.
  5. Top with toppings of your choice!

Classic American Blueberry

For that delicious indulgence – or even just a cheat day – we suggest these wonderfully rich American blueberry pancakes. We regret to inform you that the blueberries don’t exactly make them healthy, but they certainly make them delicious!


Ingredients (makes 10 small pancakes):

200g self-raising flour

1 teaspoon baking powder

1 egg

300ml milk

150g pack of blueberries

A generous tablespoon of butter

A pinch of salt

 

Instructions:

  1. Mix together the flour, the baking powder and a pinch of salt in a bowl.
  2. In a separate bowl, beat the egg and milk together until combined.
  3. Make a well in your dry ingredients, then slowly work in the wet ingredients while whisking to make a thick, smooth batter.
  4. Melt the butter, then work it into your batter thoroughly.
  5. Gently stir in the pack of blueberries, washing them beforehand and checking for any leaves.
  6. Bring your pan to a medium heat with oil or butter, then get cooking!
  7. Each American-sized pancake requires a large tablespoon of your batter. You can cook about 3-4 at a time this way.
  8. Cook until bubbles appear on the surface, then flip and cook for another 2-3 minutes until golden.
  9. Finish with the toppings of your choice!
